Rainbow Chard Wraps Stuffed with Creamy Cauliflower

Have you ever eaten rainbow chard?  Rainbow chard is the common name used to describe chard that has a variety of bright yellow, red, orange and purple stalks in each bunch. It can be eaten raw in salads, braised or added to soups, stews or gratins.  And you'll find it in a lot of Mediterranean dishes.  

A 2009 study published in "Food, Agriculture and Environment" reported that chard is a rich source of polyphenols, antioxidant compounds that may help lower your risk of heart disease, cancer, diabetes, osteoporosis and degenerative neurological conditions such as Alzheimer's disease. 

Don't discard the bright stems before you eat them, that's where the highest amount of polyphenols are located.  Also, a 2013 study found that the most deeply colored parts of green leafy vegetables like chard have the highest polyphenol and antioxidant activity.

Rainbow Chard Wraps Stuffed with Creamy Cauliflower 
Ingredients: 
  • 1/2 onion diced
  • 2 cloves garlic, finely chopped
  • 1/2 cup low-sodium or no-salt-added vegetable broth
  • 6 cupss finely chopped cauliflower florets
  • 1/2 lemon, juiced and zested
  • 1 tablespoon nutritional yeast
  • 2 cup rainbow chard, finely sliced
  • 4 or more rainbow chard leaves (to be used as wraps)
  • 4 tablespoons raw almond butter
  • 1 tablespoon sliced chives

Directions
  1. Saute the onion and garlic in a post without water, stirring often until golden brown--about 7 minutes
  2. Add the vegetable broth and cauliflower and saute for 3 minutes. 
  3. Add all other ingredients and cook for 3 more minutes or until cauliflower is al dente.
  4. Prep chard leaves to be used as wraps by washing them. 
  5. Fill the leaves with creamy cauliflower stuffing and wrap them up.
  6. Enjoy!
